Description

September 27th, 2020

I have been storing this cake in my home since December 2015, and only got around to trying it for the first time yesterday. This tea was stored in Kunming cryostorage (cool and dry storage that impedes aging) up until I received it, so I knew I'd have to wait for this cake to truly develop to where I wanted it. This tea is now incredible: so much so that I will buy more of this recipe as soon as I can since it is without a doubt one of the best Dayi raws I have ever had the fortune to age and try!

The cake has darkened up beautifully and the silver spring tips are very visible against the darker material in this production. The neipiao (yellow information sheet from Dayi) has yellowed beautifully and has become delicate enough that I inadvertently tore it during handling (it didn't take much). The dry cake has a light sweet aroma without any distinctive youthful or dry storage notes: I'm fortunate that my home storage environment is very conducive to aging pu erh just right. I'm offering up three samples of this cake today for those who are interested in seeing just what this cake can be when stored naturally in my environment. If you've had this cake from other vendors, I think trying this tea could be quite the eye opening experience!

Please note you will want to shorten your infusions with this tea since this is a smaller-leaf grade production: it infuses hard and fast and will get overpowering quickly if brewed like larger leaf grade material.

Dayi gongting grade material (both sheng and shou) is incredible when aged correctly, and this is definitely no exception. The first infusion is sweetly aromatic and incense-like. The liquor is very full tasting and the aftertaste is deep and longlasting: true testament to the quality and aging potential of Dayi cakes from this period. This tea has a sweet and deep flavor profile and excellent cha qi: I find it to be somewhat trippy as well as relaxing. The flavor is deep and fruity. I can't pinpoint which fruit, exactly, but the flavor reminded me of raspberries of sorts. There are no aged book notes here that you might find in this cake from other storage environments. This truly has aged beautifully in my home, and I believe it would continue to do so. From the first infusion, I already know I need to get more of this, price permitting (and I will)!

The aroma in the cup fills my airways with the heady, sweet scent.

I overbrewed the second infusion some since I got distracted, and the second infusion was bitter with some hongcha character. The flavor was, however, still excellent (and intense)! I got a nice aged citrus character in the aftertaste that reminded me of chenpi (aged orange peel), but was also different. The high grade material used in Dayi gongting-grade productions truly stands out and gives me flavor I don't find in their more standard-grade productions after careful aging: Dayi's 0712 is another standout for me in this way, but I know other people have been disappointed by this recipe from other storage environments.

This is an incredible tea now, and truly a testament to the sheer quality of Dayi's gongting material. When stored just right, it provides an astounding experience!
